Olive,watermelon, fetta and mint salad
Ingredients
1 cup Nefeli Green Olives with Cranberries (or marinated with citrus/spice), halved
3 cups chilled watermelon, cubed
1/2 cup feta cheese , crumbled
A handful of fresh mint leaves, torn
1/4 red onion, thinly sliced (optional)
2 tbsp Goldi Extra Virgin Olive Oil
1 tbsp balsamic glaze or fresh lime juice
1 tbsp Nefeli Balsamic Cream with Fig
Instructions
In a large bowl, combine cubed watermelon, halved olives, crumbled feta, and red onion (if using).
Drizzle with Nefeli extra virgin olive oil and balsamic cream with fig.
Gently toss to combine, being careful not to break the feta too much.
Top with torn mint leaves and serve immediately.
(Optional: Chill serving plates beforehand for an extra-refreshing experience.)
