Parmigiano Reggiano with its sun-like shape reminds us of its origins. It all starts from the sky which through the sun, the rain and frost gives nourishment to the fields. These fields situated in a restricted area will provide excellent fodder for the cattle. Only five provinces and their cattle have been selected for the Parmigiano Reggiano production. In selected farms the cows are milked twice a day, morning and evening. The milk is then transported to small 'caselli', dairies, ready for the big transformation. The 'casaro', dairyman, his experience and skill and a few wooden tools are the only necessary ingredients for this magic of nature.
